When I lost the ability to digest dairy fat, it felt like a tragedy because cheese had been my favorite food all my life. Non-dairy cheeses are OK for cooking, but they are decidedly not cheese when eaten as an hors d'oeuvre or snack. Many have palm oil or coconut oil, which I can't digest any better than butterfat, and even for those who can, they're little or not at all any more healthful. Lifetime sharp cheddar really does taste, feel, smell, and cook like real cheese, which it actually is. The fat-free mozzarella, Swiss, and jalapeño pepper jack are good, too, but the sharp cheddar is the one that most fully satisfies my cheese craving.
