We've tried many fat free cheeses over the years, and this is the best for flavor and texture. Our favorite is the Sharp Cheddar, but they are all good.

I use this cheese in tacos, on a toasted English muffin, anytime I'd use cheddar cheese. Guilt free. So good

I find Life Wise cheddar to actually be superior to its predecessor, Lifetime. The flavor seems more vivid and a little more complex. With the current predominant mentality that fat isn't bad in one's diet (forget about the distinctions between saturated and unsaturated), it's much, much harder to find fat free cheese on the store shelves. The fact that Northwoods makes such a good nonfat cheese is a godsend. One criticism that I've had in the past is how soft the cheddar is, making it difficult to grate. What I've since realized is, given how soft it is, grating (for sauces) isn't necessary; simply slice it thin and it easily dissolves in liquid. I regularly use it in my scrambled eggs and will use it in my baked chili spaghetti recipe from time to time. I recommend it to anyone watching one's saturated fat.
